dc.description.abstract | Οι ελιές αποτελούν ένα από τα παλαιότερα προϊόντα διατροφής στον
ανθρώπινο πολιτισμό. Με την πάροδο των χρόνων, έχουν αναπτυχθεί πολυάριθμες
μέθοδοι για τη μετατροπή του ελαιόκαρπου από πικρή τροφή σε βρώσιμο τρόφιμο. Οι
μέθοδοι επεξεργασίας των επιτραπέζιων ελιών βασίζονται στην ενζυμική υδρόλυση
πικρών φαινολικών ενώσεων, οι οποίες εντοπίζονται φυσικά στον ελαιόκαρπο, αφού
απαραίτητη προϋπόθεση για τη μετατροπή του σε βρώσιμο προϊόν είναι η
απομάκρυνσή τους. Σήμερα, υπάρχουν τρεις κύριες μέθοδοι εμπορικής επεξεργασίας
επιτραπέζιας ελιάς: η ελληνική, η ισπανική και η μέθοδος Καλιφόρνιας. Αυτή η
εργασία βιβλιογραφικής ανασκόπησης, αρχικά παραθέτει στοιχεία σχετικά με τη
χημική σύσταση του ελαιοκάρπου και πώς αυτή μεταβάλλεται κατά την επεξεργασία
του με τις παραπάνω μεθόδους που εφαρμόζονται για την παραγωγή επιτραπέζιας
ελιάς, οι οποίες και περιγράφονται στο εισαγωγικό μέρος της εργασίας. Το κύριο μέρος
της εργασίας επικεντρώνεται στις νέες τάσεις και προοπτικές που υπάρχουν για τη
διαδικασία εκπίκρανσης του ελαιόκαρπου για την παραγωγή βρώσιμης επιτραπέζιας

dc.description.abstracttranslated | Olives are one of the oldest food products in human civilization. Over the years,
numerous methods have been developed to convert the olive fruit from a bitter food to
an edible food. The methods applied for table olives processing are mainly based on
the enzymatic hydrolysis of bitter phenolic compounds, which are naturally found in
the olive fruit, since their removal is consider as necessary for turning the olive into an
edible product. Today, there are three main methods of commercial processing of table
olives: the Greek method, the Spanish method and the California method, which are
described in the introduction section of this bibliographic study. This work initially
refers to the chemical composition of the olive fruit and the changes occurred during
the processing of the olive fruit with the above mention methods applied in the
production of table olives. The main part of the study focuses on the new trends and
perspectives exist for the olive fruit debittering process applied for the production of
edible table olives. | el |
